Jefferson Vineyards Harvest Dinner, Post 2: Tortes!

Underway now is preparation for the tortes. I’ve done the detailing of the basic idea here,

but these will be a bit different. The topping is fresh apples from Albermarle CiderWorks/Vintage Virginia, with walnuts, golden raisins, and fresh cranberries over a blue cheese mixture. I “stewed” the topping yesterday, as it’s best if it sits for at least 48 hours to firm up, and currently the cheese is softening. There’ll be pics later tonight as I go through the initial molding. It won’t be un-molded until shortly before service tomorrow, so you’ll have to come back for photos of the finished product then!
