My article in the Star-Exponent this week included a reference to kufta.
Kufta is an Indian dish, often made with lamb and bulgar, that is sometimes referred to as the “Indian Hamburger,” or “Indian Meatballs.” Kufta is also made from lentils instead of lamb, as mine are, for a filling, cheap, and tasty lunch or dinner. You can fry or bake kufta, but with the vegetarian version it’s not strictly necessary. I served these garnished with parsley. We put them into home made flat bread, and topped them with a spicey yogurt and cucumber sauce. Yum!
