Colored Peppers with Sausage Stuffing

So, I don’t have a recipe for this, per se. I tend to just mix what I have around. I can tell you the stuffing is a brown rice base, with sliced grape tomatoes, crumbled bacon & sausage, some chevre, fresh basil, thyme, and some other spices, and a few other things I am forgetting right now. Mix, stuff, and bake at 305degrees for about an hour, and you get:
