    Mango Lassi

    You'll want to make a lot of this. I triple the recipe, and we always go through it. It's perfect with spicy Indian food because the yogurt helps mitigate the spice if it gets to be too much.

    Ingredients

    1 c. yogurt, plain

    1/2 c. milk

    1 1/3 c. mango, chopped (or canned or frozen)

    cardamom, fresh ground if possible

    sugar or honey to taste (optional)

    Directions: Throw everything but the cardamom in the blender and blend until smooth. Top with cardamom before serving. You can also garnish with fresh mint leaves.

Personal Food Philosophies

Food-related stuff I do: Cheese making, dairy-related everything, research into historic recipes and techniques, cooking (of course), practical food preservation research & practice, nutrition for special needs and general folk, gourmet food on a budget, and probably more that I am forgetting. Mostly, though, I just love to cook great food. And eat it.

As anyone who knows me can attest, I have very strong opinions in all areas of my life. One that gets talked about so little, though, is food. Food is the way I show people I care, a way to express myself and my emotions. As such, I have some pretty strong beliefs about food and the things surrounding it.

-Everyone should know where their food comes from. “Beef equals cow” and “potatoes equal roots in soil” are thoughts so far removed from our world that people seem to think chicken has no feathers and is incubated in plastic wrap. This isn’t healthy–you should KNOW what you’re eating.

-Everything in moderation (medical conditions excluded). This is the diet of the healthiest, fittest people I know. It is a lifestyle I lead with zest.

-Pre-made, pre-packed foods are the devil. Sometimes a necessary one, but a devil nonetheless.

-I am a strong raw-milk advocate. Denaturing foods is, I believe, one of the reasons this country is so obese.

-You can eat a good diet on a small budget. It’s possible. You CANNOT eat a good diet at poverty level. The food system in this country is just atrocious.

-Food is health. The two are so intertwined science still has not made all the connections.

-Don’t mess with my chocolate.

-Local. Local. Local. Those who can afford it should buy as close to home as possible. Local farmers, local butchers, local merchants.

-Cooking a really tasty, healthful meal does NOT have to take all day.

-Sustainable farming is one of the biggest keys to our future. Mostly because if we keep up what we’re doing now, we’re all going to be fat and starving to death.

-Food can and should be preserved without unnatural additives. It’s not that hard, and it’s usually cheaper than the junk they add to food these days.
