Hm...by processing, I am not sure if you mean the cooking or the canning. Cooking will depend a lot on quantity and type of peach. You want it to be the same consistency as apple sauce, so if the peaches are really watery, it&#039;ll take longer. The ones we did took about an hour for this kettle. For canning, I just processed like apple sauce in a hot bath canner (everything hot and sterlized, of course), for 15 minutes per the directions I have for my canner.
